A honey's antimicrobial rating measures one thing: how effectively it inhibits bacterial growth in a laboratory test. Why TA Alone Is Not Enough

Total Activity is a valuable, well-established measurement. We use it. We put it on our labels. But it was developed primarily to quantify antimicrobial performance, and honey is so much more than an antimicrobial agent.

Consider what TA does not measure:

Antioxidant capacity. Research by Pavy & Dragar (WA Jarrah Honey Committee, 2011) found that Jarrah honey contains approximately three times more antioxidants than New Zealand Manuka honey. Antioxidants aren't captured in a TA test — they require different assays entirely (DPPH radical scavenging, FRAP, or ORAC methods).

Prebiotic activity. Schell et al. (2022), published in Frontiers in Nutrition, tested Jarrah honey as a prebiotic and found it supported the growth of beneficial gut bacteria. The oligosaccharide and fibre fractions responsible for prebiotic activity are invisible to TA testing.

Phytochemical richness. Jarrah trees produce a complex array of polyphenols, flavonoids, and other plant-derived compounds that are deposited in the nectar and survive into the final honey. These compounds contribute to flavour, colour, and bioactive properties in ways that no single-number rating captures.
