Total Activity (TA) measures honey’s antimicrobial strength. The higher the TA rating, the stronger the anti-microbial power. Forest Fresh has more than 170 independent laboratory reports verifying the antimicrobial activity of our harvests.

TA combines Peroxide Activity (PA) and Non-Peroxide Activity (NPA). Jarrah naturally delivers both, while Mānuka’s activity is mainly non-peroxide and is commonly graded using UMF or MGO.

Glucose oxidase is a natural enzyme added by bees. In Active Forest Fresh honey, it remains mostly inactive, ready for moisture to activate it.

When honey meets moisture, the enzyme activates. It converts glucose into gluconic acid and slowly releases low levels of hydrogen peroxide.

This test validates the GI index of honey, ensuring it delivers a slow sustained energy boost unlike other honeys in market.
Jarrah analytical samples contain measurable oligosaccharides and have shown prebiotic potential in an ex-vivo research model.
