Honey contains the same basic sugars as table sugar — fructose and glucose — but that is where the similarity ends. It is a question almost everyone asks at some point: if I swap sugar for honey, am I actually doing anything better for myself — or am I just paying more for a different kind of sweet?

The honest answer is nuanced. At the basic level, both honey and sugar are predominantly sugars. If you are eating either by the spoonful several times a day, the difference matters less. The ratio of fructose to glucose in honey matters for glycaemic response. Because fructose is metabolised differently from glucose (it does not directly raise blood glucose in the same way), honeys with a higher fructose-to-glucose ratio tend to have a lower glycaemic impact. A 2022 study by Schell et al., published in Frontiers in Nutrition, specifically tested Jarrah honey as a prebiotic.
