Dual Antimicrobial Activity
Most honeys have some antimicrobial properties — primarily through acidity, low water content, and osmotic pressure. What sets premium jarrah honey apart is the type and degree of its antimicrobial activity.
Peroxide Activity (PA): When jarrah honey comes into contact with moisture — saliva, water, wound fluid — the enzyme glucose oxidase catalyses the production of hydrogen peroxide. Jarrah honey has exceptionally high PA, among the highest recorded for any honey type. Research by Irish, Blair and Carter (2011) published in PLOS ONE confirmed significant antibacterial activity in Australian honeys with high peroxide activity.
Non-Peroxide Activity (NPA): This includes antimicrobial compounds that remain active even when the peroxide is neutralised — primarily phenolic compounds and methylglyoxal. Jarrah honey has meaningful NPA as well, though its primary antimicrobial strength comes from PA.

Why Jarrah Honey Is Genuinely Rare
Unlike Manuka trees, which flower annually, jarrah trees follow an irregular cycle — typically flowering once every two to four years. No amount of agricultural management can accelerate or guarantee this cycle. It is determined by the tree, by rainfall patterns, and by conditions in the ancient forest.
In years when jarrah flowers prolifically, a good harvest is possible. In off-cycle years, there is no harvest — regardless of how many hives are positioned in the forest.
