A great, quick and easy marinade for chicken that the whole family can enjoy. The Marri honey gives it an extra level of flavour and sweetness many other honeys do not. Prepare it a day before for best results. You can also swap out chicken drumsticks for chicken wings.
2 to 3 cloves of garlic, minced
1/2 cup soy sauce
2 tbsp oil
2 tbsp ketchup/ tomato sauce
1 cup Marri honey
1kg chicken drumsticks (approx. 6), scored
Salt, pepper and chilli flakes to season
Combined all ingredients other than chicken in a large bowl or fridge friendly tray. Mix well. Add in the chicken drumsticks and mix well, ensuring some of the marinade goes into the shallow cuts made when scoring the chicken. Leave overnight (or at least 4hours) in the fridge, turning once. Cook on BBQ, or in oven at 180 C degrees for 60minutes, turning once or twice to maximise flavour. Serve immediately with roasted vegetables. Enjoy.
